We did tastings at several local wineries and bought a few of our favorites at each. There were 22 different wines from 5 wineries. Two reds, three whites and a blush were available at the bar, and the rest served as centerpieces.
Centerpieces on the high top tables at the bar and all of the tables in the wine lounge were 2 bottles of wine, typically paired as red/white or blush/white. Where we had second bottles of a wine, they were saved to refresh empty bottles. There were hard plastic cups on the wine lounge tables so guests could try different wines. Wine lists of what was available were placed on the tables.
Finding a venue and caterer who allowed us to bring in the wine aided in the cost of the bar tremendously. We opted for a large variety over having large quantities of a couple different things in order to have something for everyone.
It turned out that a lot of the men who always have a beer in hand are actually closet gin drinkers. We thought we only had a couple gin drinkers and a ton of beer guys. The gin was gone in the first hour or two and came home with over 90 of the 120 bottles of beer. Shock Top was the most popular while Killian's was barely touched. Rum was also barely touched.
The cocktails were a big hit and our guests did a pretty good job on the wine. As predicted, when something ran out, our guests just moved on to the next one without an issue. They're not really picky drinkers or the type to stick to one drink all night, so I'm glad we went with the large variety over a large quantity of each thing. However, if I had to do it again I'd only get 2 cases of beer and double the quantities of gin and whiskey.
